I don't know how to multi-quote, so... bimble - I do like a good bit of Red Leicester. The brand I have access to isn't that grand but it is a nice treat now and again. Suzi- the cheese rolling contest looks like a lot of fun. I like the fact that, according to the article, it's allowed to happen spontaneously. donavan- as Stephen Fry calls it, 'health and f*%king safety.

peggs But I love H+S and political correctness, within reason. Both are being eroded, we need them, more than ever now. I don't like cheese that smells like vomit or smelly feet.

I don’t disagree with you donavan. It’s the ‘within reason’ bit that causes problems. Like any gov’t. program, erring on the side of caution will make some person or group unhappy and be seen as intrusion. Rightly or wrongly….
Yup, really stinky cheese is a no-go for me as well.
How about a nice piece of colby cheese? It smells of nothing and tastes like milk - kind of boring.

It can often be what you eat with the cheese that brings the whole thing together. Not unlike wine.

Donanvan, cheesecake is usually made with cream cheese, like you may spread on a bagel; Kraft Philadelphia is a well known brand. Why is it called Philadelphia cream cheese? I haven't a clue.
Cheesecake can also be made with various combinations of soft cheeses and even tofu <-better than it sounds. Why did I go on about cheesecake? I don't even care for it that much but made many back in my bakery days.

Dr. Hugbine, the name Thomas Hoe Red rang a bell and a quick google search confirmed that I have had the pleasure of tasting that delicious aged Leicester.

Have you ever had Irish cheddar marbled with Guinness? Some say it tastes of roast beef. Mmmm! I do seem to recall I've heard that somewhere. But I have had this and it's wonderful !! A lovely, soft cow's milk cheese washed in Chimay Rouge.

It's a very special time of year in my neck of the Great North Woods, when Rush Creek Reserve has aged to perfection and delivered to my favorite cheese shop.
Here's a picture of this heavenly concoction:Served slightly warmed and spooned onto hearty bread, it tastes of beef broth and cream. Yum! Perhaps cheesemakers in your area make something similar. Rush Creek is inspired by Vacherin Mont d’Or.
