Glad to see you back, Mare: where ya bin? Basil Fawlty answer...I've "been to London to visit the Queen!" Hi, Bimble! Thank you! I moved, started to focus on changing my bad health to good health (work in progress, but moving along quite well) and still have psychological damage from an old Back Porch pop up giving me a 'puter virus and having to wipe my old PC. Feeling more the thing, these days, and wanted to rejoin you all already in progress. (That FB place has kept me away, a bit, but I missed those who do not go there so much that, well, I could think of nothing I wanted more to do than to log in here.

Welcome back, Mare and good on you for taking care of your physical health. Daiya isn't too bad; better than nothing at all. Have you heard of/tried Field Roast Brand, Chao Slices? A vegan co-worker says it's the best he's tasted. --------------- The new year is a vegetarian one for me so it would be easy to load up on dairy products. Instead, I will cut back and use all the delicious cheeses available as flavor enhancers to already great dishes.

You have that right, Bimble! It may stretch and melt, but if you put it on gluten free bread and pizza it, it sets (read: hardens into a crispy thing) very quickly after it is removed from the oven. Sigh.

Either someone (my son I think it was, his fiancee is lactose intolerant and he has been exposed to a bunch of non-cheez cheez) told me about Chao or I may have actually seen it in the store, because I vaguely remember it. Haven't tried it, will do so, though. The first non-dairy/non-soy cheez I tried was way too sweet to put on pizza...I peeled it off and ate the cardboard, gluten free, frozen pizza crust I got with just the sauce and olives and fresh mushrooms. The two things I craved in a major way when I changed my diet were pizza (two evils in it: cheez & wheat) and tea [no caffeine(iced: I have had it every day of the year for a very long time)] Oh, I also miss grilled cheez sandwiches...that and mac & cheez, they were dietary staples and my most comforting comfort foods. The not cheez cheez I have found to be o.k. is this stuff, but it is still NOT CHEEZ! As far as enhancing the flavor of things, that is a good idea...that wasn't a possibility for me, due to stunningly high cholesterol levels.

Mare .... My friend, Janice is a vegan. She started out vegetarian and then made the step to vegan. I've heard her speak of other Field Roast products and she recommends them. I'm sure she's had the faux cheez/cheese. I know she told me it's good to have some 'vegan friends' to tell you what is good or not because some of those products are just horrible; a lot of trial and error into finding good ones but they are out there !! I'll ask her for some faux cheese recommendations and get back to you !!

I am still eating eggs, and once in awhile I wind up with cheez in my food when I order out and forget to say "NO CHEEZ!" Hard to believe that those words actually come out of my piehole, but they do, now.

Mare, have you ever heard of or tried nutritional yeast as a cheese substitute? It makes a fantastic cheese sauce for mac&cheese. Lots of recipes online. And if you use a gluten free beer you can make beer cheese soup. I've had both dishes and they taste pretty darn good.

Both you and Ellen have now mentioned Nutritional Yeast to me...I had heard of it, but had no idea what it was or how you used it. I appreciate your info, as well as Ellen's...I saw a little jar of it in a store yesterday, and actually picked it up and read the label! I will pick some up at a store where I know I can get things like that less expensively than where I saw it.

MareIf you have a "Whole Foods" or similar store with a bulk section you should check there first for Nutritional Yeast. That way you can get an amount to try out without stocking your shelf with a jar that will possibly never be emptied. ...and it might be cheaper too.
