I made my first attempt at Indian cooking. Nothing too complicated, a green lentil dahl, or daal. Lots of spices, onion, ginger and garlic. I used coconut milk as suggested. When it was close to finished, I added spinach and chopped carrots. Served with flatbread, yogurt and my marinated vegetables. I was pleased with the result.

Yeah, I get sucked into watching those vids. A lot of the time I don't even know who the artist is. I watch a lot of the Justin Hawkins (The Darkness) stuff too. I watch more YT than regular TV. And the fact you have the YT app on your TV means it's so easy and accessible. It's amazing how time can fly by whilst watching this stuff.

I collected spruce tips in the forest today to make spruce tip flavored ice milk (fat free milk not cream base, using Norway Spruce which is non native species here). Going to also make spruce panna cotta and syrup. Making pine cone syrup too.

The spruce tip panna cotta is interesting. It did not set as much as I'm used to I don't know if that's because of the lack of eggs in the recipe I'm used to egg whites or the sheet gelatin behaves different even though called for that then used to. It's more intense in flavor than the ice cream. It's like getting intimate with the forest. A bit more than desired but worth trying. I think I would use a little less next time.
