I've lost 3.5 stone (50 lbs) in the past 12 months. High cholesterol and triglyceride levels -- all hereditary, I swear! -- forced me to become a born-again-vegetarian whilst also eliminating white rice, potatoes, breads, pasta and dairy products from my diet. So last night's dinner consisted of fresh corn on the cob and a bowl of homemade veggie chili washed down with a glass of potassium-heavy almond milk.
I know you're all green with envy.

Fresh corn is incredible. Can't fathom saying goodbye to bread, potatoes and such starchy goodness, but I eat less of it now.

And corn comes out as it goes in so can be used over and over. Money saving tip for you. Well done with the weight loss terra, I really must do something.

I chew my food, Don. Legumes take the place of meat. Sweet potatoes instead of regular potatoes. Stick a soy-based patty between two slices of quinoa bread, and you've got yourself a tasty burger. Lots of healthy black and brown rice mixed with olive oil-cooked bell peppers, mushrooms, onions and celery sprinkled with sriracha or chutney. Pecan-and-raisin socca. Lots of fruit and Greek yoghurt. Salads. Tuna and salmon. I have the advantage of having lived a number of years in East Asia, where this sort of diet is common.

You can chew the fuck out of corn but it still comes out whole. Take a peek next time.

For dessert: Made a very tall and scrumptious New York-style lemon cheesecake topped with custard and fresh blueberries. Looks a lot like this:

Made an enormous salad; spinach, cabbage, carrots, cucumber, peppers, pineapple, chicken, chopped peanuts. Sort of a bastard Chinese Chicken take.

Veggie hot dog on a slice of quinoa bread, garnished with sauerkraut, mustard, black olives and sriracha. Seedless grapes for dessert.
I made the kids a modified Lancashire hotpot -- ground pork instead of mutton. Everyone had a second helping -- and my son's girlfriend, three, lol. Baguette and roasted garlic goat cheese after the meal.

Half my meals the past several weeks have consisted of either three ears of corn or great, big, steaming heaps of string beans. The thrill hasn't gone; I'm hooked.

Well somebody here might just save the planet Enjoying figs and pears are coming in. Last we we got into squash, I think it popular again. I usually have to have a day of mourning when I realize summer fruits are over, a few zombie holdouts may be found but best left alone.
